I have a project in mind, but I need a interactive web language, what languages are out there for interactivity?

It depends on what you're doing. If you want something to be very responsive to user input and not communication often with the server, you want something client-side. Javascript and Flash are pretty much the only games in town with regard to that.

If you want something to communicate with the server and you don't mind latency, then there are dozens of scripting languages that could meet your needs.

Server Side: Perl and PHP

Depends if you're using an editor, how much experience you have and what types of interactions you want to create. My gut response is that you should use Javascript, since this covers most of the normal functions that people want to use and is relatively simple.

If you go the javascript route, check out some frameworks such as MooTools, jQuery or script.aculo.us. They make it much easier to get started.

Do a google search for Javascript tutorials. There are lots of resources out there which will teach you the basics.
