Encryption for Data Disc (cd or dvd-rom)

I use truecrypt, and create files that are just under the size of the cd/dvd.

I then mount the truecrypt "drive", put data into it, unmount the "drive", and burn the file to dvd/cd. Then I can simply mount the file from the dvd, and get my data back.

This is also part of my backup strategy for all of my financial papers, etc. I use a truecrypt container to keep a copy of all scanned documents, my current budget, and anything of that ilk. Then whenever I visit relatives/friends in another state, I burn the latest copy, and take it with me. It's secure in that I know that there's no way that they can get into it, and it's secure in that it is not only an off-site backup, but out of state even.
