I know I said this before Steve, but I'd love it if after the 30 days raw you tried another 30 days (or even just 15) of adding stuff to the diet that is still raw-sh but fleshes the diet out more, like nuts, onions, etc. It seems like you aren't trying a 'raw' trial as much as a fruitarian one!

Also, regarding the drying - I was going to say initially it might be due to reduced fat in your diet playing havoc with your skin - but if the drying is only on hands, probably not.

Also, I haven't seen any coconut, which is delicious raw - but I guess falls in the nut catagory?

Odd synchronicity though - I've been working there since August last year and I've only just started to get the cracked knuckles now.
So what's the humidity like where you work? In Philly and St. Louis (two cities I have much experience with), the humidity runs high in the summer, and even if the percent humidity is the same outdoors in the winter, indoor environments are very dry although this is related to how much the heating system is used. Also, at a 70% humidity translates to more moisture at 70 degrees than at 30 degrees.

Anyway, my skin chapping problems always crop up in winter and go away when the weather warms up and the humidity rises. I'll bet it's drier in the coffee shop now than it was last August.

He's done those trials before and found them unpleasant. He wrote about it in the last couple Blog entries before the new year.
