Okay, I didn't do a search to see if this has already come up, but what are your favorite veg*n cookbooks? Lately I have not been cooking AT ALL as my ex was a fabulous cook and he spoiled me. But ordering in has proved disasterous for my waistline! I want quick, healthy meals that don't require a ton of specialized ingredients. I am stinkin tired when I get home from work too, so I don't want to spend all evening cooking (then again maybe I am so tired because of how I am eating). Or, if anyone has any recipies, I am all ears. Soups and other things I can freeze for quick lunches for work would be great. Thanks. Some of these recipes are easy, but the nice thing about this cookbook is that almost everything can be made in bulk and kept for a while, so you always have it on hand like vegan parmesan. Amazon.com: Vice Cream: Over 70 Sinfully Delicious Dairy-Free Delights: Books: Jeff Rogers Vice Cream is an awesome replacement for ice cream. I am now buying an ice cream maker with a compressor in it. It has raw and vegan vice creams. I no longer need to by sorbet or anything like that in the store. Its really easy too. Basically he tells you what you need. You put it all in a blender and blend it really really well (powerful blender is essential for this cookbook) and then dump it in the ice cream maker (ice cream makers is also essential.) Its so easy and oh so good. Amazon.com: Raw Food Made Easy For 1 or 2 People: Books: Jennifer Cornbleet This is nice and easy and simple. Basic ingredients that you can get anywhere. For simple easy weekday meals I also use the website Vegan / Vegetarian Recipes and More for the Vegan Diet and Lifestyle a lot. I would have to say Vegan with a Vengeance by Isa Chandra Moskowitz is my most used cookbook. Some of the recipes are available on the Post Punk Kitchen website. The Post Punk Kitchen: Vegetarian cooking & vegan baking with no attitude I also use Everything You Always Wanted to Know About Whole Foods but Where Afraid to Ask by Christina Pirello quite a bit. She also has a cooking show and a website. Christina Cooks - Home Page There are many vegan food blogs that I get recipes and inspiration from.
