Default Vegan Diet

Sorry if this has been spammed, or if there is another thread asking the same thing, but what do you eat on a vegan diet? Id like to try it, but I have no idea what to eat. What do you eat in any given week?

I moved this thread over to health and fitness. There are alot of people in the health and fitness board who are vegan.

Also, personally when i went vegan. I went on amazon and checked reviews and bought 5 cook books (all of which i love and use all the time). I read then, hit the store for certian foods i needed. I also found a great wesbite with lots of vegan recipies. Vegan / Vegetarian Recipes and More for the Vegan Diet and Lifestyle

Vegan Cookbook: Vegan Family Favorites by Erin Pavlina

You'll get a great idea of the kinds of foods we eat, but to give you a smattering of ideas in this thread.

Breakfast: oatmeal, pancakes, waffles, bagels with vegan cream cheese, tofu scramble, muffins, fruit and fruit smoothies, tempeh bacon.

Lunch: sandwiches, salads, wraps, veggie burgers

Dinner: herb crusted cutlets, bbq riblets, tofu steaks, mock chicken strips, mashed potatoes, corn, carrot sticks, veggie stir fry, veggie burgers, pasta

Again, just some ideas.

Wow, those all look pretty good. I dont have any real sort of cash flow and I cant really cook right now, but Ill look to buy a few books when I get enough.

There are zillions of recipes on the web and a lot of them aren't difficult.

For example, check out how easy this is:
Vegan Recipes - Tofu Scramble

Personally I'm fond of the following bean salad:

Take 1 can red kidney beans and 1 can cannelli beans (rinse the beans under the tap in a strainer before use).
Combine the beans in a bowl.
Add some chopped red onion (I like it finely chopped, personally).
Add lemon juice or balsamic vinegar to taste.
Add pepper to taste.
Adding some chopped tomato and cucumber is nice too.

It's yummy, takes 2 minutes to make, costs bugger all, is really filling, and you usually end up with leftovers for a couple of lunches.

Plus add some rice and you've got a complete protein...

I think unprocessed / organic raw nuts and seeds should also be the main part of vegetarian diet as there are loaded with anti cancer/anti heart disease undamaged polyunsaturated fats that you cant find in commercial vegetable oil or processed food (like peanut butter )

Erin Pavlina's recommendation on vegan recipe seems delicious but i bet she would need alot of exercise to burn of those fuel(caborhydrate) to keep in shape .

Note : If you are allegic to nuts, then look for other alternatives.

I tried to be a Vegan several times, but after a couple of days I did not have enough energy to work and think... Sugar helped me a bit, but I was afraid to get diabetes When I switched back to non-vegan diet, I felt myself better... I wonder if I'm just a very active person?... or vegan diet is not for everyone?...

Alex, I think a good resolution to that problem would be to eat a handful of mixed nuts. They have a lot of protein.

I am not a full time vegan but most of the time I eat vegan diet and lots of raw vegies. Sometimes I do eat eggs, and seafood if unavoidable.

I notice that I lose lots of weight since I change to this diet 4 years ago and remained thin even thought I eat a lot. Im trying to gain weight now.

Am I the only one in this situation or many other vegans are thin too?
