Hey Vegans! Share your secret recipes here for others to try out. The other day I came across a great recipe on Scrambled Tofu, now I haven't tried it yet (I will as soon as I move into my own place My Recipe: Apple-Banana Power Smoothie Ingredients: 1 apple 1 banana 1 spoon peanut butter 1 spoon sugar (white/brown/sugar-free) 500 ml soy milk Process: chop the apple and the banana into small cubes and throw it in the blender with the soy milk, peanut butter and sugar. blend well on 'high' for 2 minutes and voila! your power drink is ready, Serves 2 |

I have some great recipes in my cookbook: Vegan Family Favorites But let me post a quick recipe that I have been enjoying for the last few weeks. Banana Pineapple Soft Serve In a Vitamix or high powered blender, add the following: 2 frozen bananas 2 cups frozen pinapple chunks 2 tablespoons of sugar (optional but yummy) 1 to 1-1/2 cups non-dairy milk of choice splash of vanilla Blend on high power, using the tamper to push the ingredients into the blade. When there are no chunks left, you're done. You can add more milk for a thinner, shake-like consistency. My kids love this "ice cream." |

I'll throw another one in here that I love to make. Sorry..I usually wing it so the amounts are not exact. Swiss Chard, black bean, & mushroom tacos 2 bunches swiss chard 2 chopped shallots 1-2 cans black beans...or better yet, use your own cooked beans 1 poblano pepper (roasted, peeled, and cut into small pieces) 2 handfuls of sliced mushrooms of your choice, I like crimini or portobello. 2 limes 2 or 3 tablespoons of Masa, or a thickener of some sort. a bunch of corn torillas (I like to make them fresh...it's a lot of work but GOOD) Saute the shallots and mushrooms in a little bit of canola oil in a BIG pan. Add the black beans with the juice, poblano peppers, and swiss chard...let the chard wilt and simmer for about 20 minutes. Sprinkle in the Masa to thicken it and simmer for around another 10 minutes. Squeeze juice from 1 or 2 limes in it. Add some salt to taste and serve with some fresh corn tortillas to make some yummy soft tacos. I also use this filling for tamales as well. Thad |

Okay not a health food, but a total hit with everyone who's tried it. Another wing it recipe...so just get it to a consistency* that you like. Dredge your choice of vegan bread in the following mixture: Soy milk Flour Peanut Butter Tiny bit of nutritional yeast (optional) *Just mix this all together until it's thinner than a milkshake, but not too runny. Drop your coated bread in the frying pan with enough oil that it doesn't stick, but not too much that your eating mostly oil. flip them occasionally so you get a nice golden brown color and serve with syrup. Everybody loves this vegan french toast....it's beyond easy too. |

Here is a kick-ass vegan recipe I once tried. Spicy Indian Oats Upma Ingredients: 2 cups Oats (I use Quaker 'quick-cooking oats') 2 small Onions - finely chopped 2 small cloves of Garlic - finely chopped 1 small piece of Ginger - finely chopped 2 small Tomatos - finely chopped 1 cup Peanuts 1 sp Salt, Red-Chilli powder (or flakes) A pinch of turmeric Cilantro and Mint to taste Condiments: 2 cups Water [400ml] and 4sp Sunflower oil Process: Heat some sunflower oil in a deep frying pan. Throw in the chopped onions and saute them until they're almost golden brown. Now add in the finely chopped garlic, ginger and tomatoes. Add the peanuts, salt, red chilli powder (or flakes), turmeric. Now add the oats and pour in 2 cups (400ml) of water. Place a lid over the frying pan and simmer for 5-8 minutes. When the mixture takes on a soft cake-like texture, garnish with some cilantro and mint leaves. Serve hot with Indian mango pickle. Warning!: Extremely spicy preperation. |

| The Post Punk Kitchen has some good recipes, and is home of two fun cookbooks: Vegan with a Vengence, and Vegan Cupcakes Take Over the World! I like Jo Stepaniak's Table For Two... it's a lot simpler and easy for a noob at cooking like me to follow. Planet Organics has some of my favorite standby veggie recipes, though. If you ever pick up some chard or kale or beets and say, "Okay, what the heck do I do with this?", Planet Organics is a great resource. It's not specifically vegan, but the recipes are so simple, they're easy to adapt. |

I've had so many rave reviews on this pumpkin muffin recipe, all my friends and family ask me to specially make them ... Ingredients ¼ cup vegan margarine ½ cup sugar 2 egg replacer 2 ½ cups Self Raising flour ½ cup soy milk 1-1½ cup pumpkin puree (Just cover pumpkin in a saucepan with water and cook until tender and water soaked into puree) Method 1. Preheat oven to 200°. 2. Blend the margarine, sugar in a bowl with handheld beater. 3. Then beat in the egg replacer and fold in the pumpkin puree and soymilk. 4. Fold the flour into the wet mixture and place into prepared muffin tins. 5. Sprinkle with cinnamon sugar and bake for approximately 20-25 minutes Servings: 6 large muffins or 12 small muffins "*WARNING - You could get addicted!" |
