Hey everyone, I have just launched a new product called Easy Healthy Dinner Recipes that teaches people to cook healthy and delicious dinners in 10 minutes or less. No, this is not a sales pitch. I want to share one of my personal favorite recipes from my guide with you for free! Enjoy! Chicken Breasts and Steamed Vegetables ![]() Ingredients: 4 Chicken Breasts Mixed Vegetables Butter/Olive Oil/Coconut Oil Pepper Salt *Note* – For this specific recipe I used a pre-cut mixed vegetable selection that I bought in the supermarket. You can easily make your own combination of vegetables or even just use a single type of vegetable like broccoli if you so wish. Cooking Utensils Needed: Frying pan Normal pot (preferably with lid) or if you have a special steam-pot use that Spatula Cutting Board Sharp Knife Instructions: I would say that this recipe is the most simple and straight-forward recipe to make, yet its simplicity makes this meal so tasty and enjoyable. Fill the pot with water and put it on the stove to bring it to a boil. Put the frying pan on another plate on medium-high heat and add the butter (or olive/coconut oil). While those two are heating up, you can prepare the chicken and vegetables. I bought mini chicken fillets, so they don’t need any cutting. If you buy regular chicken breasts I like to cut them in half horizontally so they become half as thick (i.e. place the chicken breast flat on the cutting-board, place your palm flat on the chicken breast and cut horizontally between the cutting-board and your palm). This makes it much easier for them to cook properly. I also bought pre-cut mixed vegetables which don’t need any preparation, but if you bought whole vegetables like broccoli or cauliflower, you will need to cut them up into bite-size portions. Once your chicken and vegetables are ready to be cooked and the frying pan is hot and the water in the pot is boiling, add the vegetables to the water. Vegetables I like to cook for 4-5 minutes, where 4 minutes is still crunchy and 5 minutes is just nice and soft. Up to you to decide when you want to take them out, depending on how soft you want your veggies. Put the chicken in the frying pan, spread it out and add some soy sauce (soy sauce is not necessary but I like it). The chicken is easy to cook, you need to make sure that it is all white on the inside (no pink and not raw anymore – very important). The outside of the chicken gets a nice golden-brown color once it is cooked, but just keep turning it every minute or two so both sides of the chicken cook evenly. If you are not sure whether your chicken is cooked or not, take the thickest piece and cut it open to see if it is thoroughly cooked. If it is, then automatically all the other pieces will be since you cut open the thickest piece. The chicken will cook in just about the same time as the vegetables take, maybe just a little longer than the vegetables. When the veggies are done, take the pot and pour our the water (it’s hot, be careful) and put the veggies on your plates. The chicken should be done now too, so turn off the stove and put the chicken on the plates too. Add some pepper/salt and voila, your delicious meal is ready! Bon Appetit!
