Default Vegetarian recipe book

I am looking for a recipe book that has 1) easy to make, 2) healthy 3) vegetarian meal ideas and recipes. I would prefer a book that is broken down in breakfast, lunch, dinner and snacks portions.

I am BAD at meeting my nutrient requirements. I eat WAY less than my daily calorie requirements (just because I don't feel like eating and it is complicated to figure out what to eat).

I don't need to lose weight, just make sure I get my nutrients.

Do you know of any such books? I want to make this process really easy for me. So that all I need to do is look up ideas in the book and just do it.

Some favorites of mine:
Veganomicon
Vegan Brunch
the Asian Vegan Kitchen (not necessarily the easiest or most accessible, but fantastic if you like Asian food).

Also, Vegetarian Food - Vegan Recipes - Vegetarian Cooking - Raw Food Recipes - Easy Vegetarian Recipes - Vegetarian Diets - Vegan Meals - Vegetable Dishes has lots of recipes, and there's a huge community of veg*n food bloggers out there who share amazing recipes and ideas.

I am also very fond of 1000 Vegan Recipes by Robin Robertson and Vegan Vittles by Jo Stepaniak.

Two vegetarian cookbooks I highly recommend are The Vegetarian 5-Ingredient Gourmet [though more family-style, actually] and The Vegetarian Family Cookbook both by Nava Atlas. Many, if not most, of Nava's recipes can easily be made vegan if one chooses.
