Oh, that's great. Now they are pasteurizing raw eggs. I guess this is gonna turn into another raw milk type issue.

What I really love about this page is that on the bottom right under "Possibly related posts" it has a link to one of Denise Minger's China Study take-down posts called "A Closer Look at the China Study: Eggs and Disease"!

Know your farmer. Buy local eggs from the source... at most it will be$5 per dz. considering the excellent protein content it is money well spent.

Yeah, I've been getting lazy because it's an hour and a half round trip to go pick up the eggs. I used to think that buying the expensive stuff cost too much, but consider how cheap the calories/protein are compared to other foods, you are right that even at $5, it's not much at all.

They're pasteurizing EGGS now? How in the hell does that work?

Seriously, I've never seen an egg from the store look like it's been through a pasteurization process.

Wouldn't pasteurizing EGGS cook them so the yolk and egg white would be solid?
By traditional pasteurization methods, heating a raw shell egg to a high enough temperature to achieve pasteurization would also cook the egg. However, beginning in the early 1980s, Dr. James P. Cox and R.W. Duffy Cox of Lynden, Washington began developing methods to pasteurize shell eggs.

Pasteurizing eggs in their shells is achieved through patented processes that involve a series of warm water baths.[6] According to the U.S. Department of Agriculture, “Shell eggs can be pasteurized by a processor if FDA approves the process. The equipment to pasteurize shell eggs isn't available for home use, and it is not possible to pasteurize shell eggs at home without cooking the contents of the egg.”[3]
