Default weight lifting routine question

Hi, I'm 60, and after a long break I have started lifting weights, mainly Nautilus-like equipment. How many days should I lift each week?
On a given day should I concentrate on a certain muscle group, such as legs, or should I mix it up? If a certain muscle is sore, should I rest that muscle until the soreness goes away? I really don't want to increase my size, any tips? My overall goals are to lose weight, gain strength/flexibility. I am also resuming my walking program and hope to add in additional aerobic activities such as exercise bike and ski machine. Thanks for any help or suggestions.
