Default So uhh.. What should I eat?

For the first time in basically forever, I have full control over the food available to me.

I just moved out of the house for the summer into my own apartment. That means shopping for myself now

I'd like to eat "healthy" and am willing to eat lots of fruits and veggies. But really, I have no experience cooking or preparing food at all. I have a mom who is very fond of preparing big, complex meals

But I just want to keep my meals simple while I am figuring stuff out.

What is a good healthy breakfast for starters?

What are you boundaries (meat/no meat, processed/not, raw/cooked)? Are there any foods that give you more energy?
'Everyone' says that breakfast should be king, but I found that having a big breakfast drains me and makes me sleepy. I function better if I have a later breakfast (9 or 10 AM) and it's something simple and light, like a spoonful of peanut butter or an apple.

Normally I'd have any of these: brown rice, beans, a few pieces of fruit and/or some nuts.

I don't know what particular diet you're on, but I always love to brain storm, & I am wide awake:

Breakfast Idea's for a young man!! or anyone really.

Perogies, I would boil them & than fry them till they're crispy, but you could just boil them. Hash Browns, with bacon bits, or shredded hash browns. Steam veggies.

Steel Cut Oats, over night bring to a boil about 1 cup, & than turn off heat & let simmer throughout the night, covered. In the morning you can preheat the oats in the microwave if you wish. Add some milk, or unsweetened almond milk. When I was still on SAD I would sometimes add, cut up dried apricots, or banana's with yogurt, with frozen pomegranate seeds. (I would buy fresh poms, & seed them in a large bowl of water) & than freeze them. One Christmas I used Eggnog with the oats, sometimes mix in PB or canned spiced pumpkin.

Check out bodybuilding.com in their forums, Nutrition Section & look for MEN (Meals Eating Now) great idea's!!

Another yummy breakfast:

Omelet: quick & easy, or had boiled eggs, or egg whites, but keep the egg yolks for a salad.

With your omelet, smoked salmon, cheese, salsa, chicken, green peppers, mushrooms, anything you'd like really, Crack the eggs in a bowl, & throw in the other ingredients, & mix it, heat up the non stick frying pan, be careful of the oil you use when frying as it basically just turns to trans fats...in case you do this every morning.

If you like your cereals, Chow Down! I used to eat a lot of Crispix, Frosted Mini Wheats, Shreddies, you can get these in no name too.

When you get the hang of it, try making your own pancake mixes, with sweet potatoes or with PB or blueberries, not just the generic in a box kind. Buy some frozen berries or mixed fruit to add atop. Either let them sit out over night or microwave, buy some syrup or use jam, or get some nutella, whatever you'd like for sauce, or not.

These are all still great meals for any time of the day really!!

As you can tell, I LOVE my nut butters & banana's

Another oldie fav: Toasted bread with chopped up Banana's & Nut Butter, or toast with black diamond cheddar, or cinnamon

Sometimes it's grand to savour some morning bagels with scrambled eggs, avocado, tomatoes, onions, romaine or spinach, smoked salmon or make a tuna melt (yes! even for the morning) or turkey bacon, or sausages, cut in half & laid down on your toasted bagel, make a couple of toasted bagel sandwiches!!

Fruit Salads: Frozen fruit, depending where you are, & costs, or fresh blueberries, melons, papaya, grapes, apples, pineapple, peaches, ect the list goes on, cut up, tossed, with some toast & yogurt for dipping with some granola!

A simple meal for any time of the day:

Chicken Mango wraps, buy some tortillas, add mayo or avocado, lettuce, I used to cook my meat in a non stick frying pan without oil, I'd heat it up, cut up some chicken & put it in, leave it for 2-5 minutes using my scraper, add spices if you like. I was fairly plain. Maybe you want some salsa or cheese, or other veggies, remember to cut your chicken into long strips b4 cooking. Add a few strips of Mango, wrap up your tortilla & there you have it! You can also toast the wrap. Make a few of these.

For other simple idea's until you get the hang of experimentation, check out youtube, seriously they can even teach you how to boil an egg. Not saying you wouldn't know how.

Some good lean fillets: Tilapia, you fry it on one side on medium heat for about 1-2 mins, & than flip for another 1-2 mins, add some spices, such as Mrs. Dash (no salt added) you want it to flake, & be tender when you stick in your fork. Pick up some scallops, or shrimp, to either BBQ or saute or fry, they don't need a lot of heat, & you don't need to cook for very long.

Google lists for idea's of what veggies or fruits, you can't think of. No shame in it.

Pick up some pre made meatballs, or buy some ground beef, ground bison, when making them, grate some carrots, zucchini, or cukes to add in, also grind up some saltine (no salt added) crackers.

Make some spaghetti, buy some spaghetti sauce, make some stir fry's with beef, chicken, steak

Have a hard shell taco night, sour cream, salsa, shredded cheese, ground beef, veggies, diced tomatoes, olives, sprouts, or lettuce,

Have a soup in a loaf bowl. Canned soup. Some groceries have loaf bowls, or you can buy a large round loaf, & cut out the center, have some butter, or margarine on hand. That's a full meal!

Sloppy Joes, Baked Macaroni & Cheese, Buy your own pre-made pizza bread, & pick up everything you want for a pizza, & bake it.

Buy some canned tuna or canned salmon, & mash it up with lemon or spices & mayonnaise, make a salad, or add it onto some type of pasta, pasta only takes about 7-9 mins to boil.

Buy some packaged tortellini & some sauce, & go to town!!

Idea's from a Raw Foodist: I am about 85% Raw Vegan mixed with 15% Raw Paleo. << I eat raw animal products too.

Anything your heart desires any time of the day not cooked, processed, packaged, I LOVE my Green Smoothies.. I LOVE large salads, sprouts, fruits, nuts, SAD recreations,


I could go on...but yea, I think you get the picture...

Right now my favorite breakfast is cantelope, sometimes I follow it with banana and dandelion leaves

But sometimes the best breakfast is lots and lots of time out doors, folowed by some fruit

If I do eat breakfast, it usually consists of a glass of fresh-made fruit or vegetable juice or some nuts/dried fruits made into a mix. Sometimes, I have fresh fruit.

I just went shopping at the grocery store all alone for the first time

Well when I went in there I decided "only raw foods" so I ended up buying like... $12 worth of fruit lol.

Basically some bananas, grapes, pears, apples.... and that's about it. The grocery store is literally like 2 minutes from my apartment, probably about a 1/2 mile round trip, so I can swing by anytime I need.

I was so surprised that buying my own food is so cheap too! Only $12.xx for what is at least 4-5 small meals worth of food for me. I am so used to paying $8 for a meal at my university, it is crazy how different the prices are. Plus I think that raw food is a bit more filling.

Also... I don't really know any recipes. I don't know how to prepare many vegetables either, cause a lot of them looked like they needed cooking or steaming or something like that.

Anyways, I am working on adjusting to things. I still need to get a morning exercise routine established too. I want to order the P90X dvd's (my brother has a copy at our parents' house) but right now I can't even get my dvd player working! Arg!!!

The most general, yet still useful, advice would be to stick to the outside isles: fruits, veggies, meat, eggs, and maybe dairy. Minimize items with more than one ingredient.

My basic, low maintenance diet centers around a daily green smoothy with a few eggs, berries, green leafy veggies, a banana or two, with maybe some cinnamon and cacao nibs thrown in. I usually have this after exercising. At other times in the day I'll have a large bowl of steamed veggies with butter, some rare meat, and at work I may have some nuts or seeds (ideally raw and presoaked).

Do you have a Blender, processor, dehydrator, spiralator, juicer by chance?
I am guessing you're going all out for Raw Veganism?

-Young Thai Coconuts, very yummy! The water is better than milk & rehydrates you better than water. The meat really thickens my smoothies, sometimes on fluke I get an older Young Thai & the meat is a little thicker. Which I also love!

-I have a lot of HUGE green salads, & I pulse my salads with a little water, adding garlic, lemon, sweet onion, ect
-I also have at least one cuke a day
-& I love my tomatoes

Hey... your green text is a bit hard to read

In the future I am planning on going with a diet based on the foods listed here.

Ultimately I would like to make a list of every nutrient I need to consume each day, then make a matching list with foods that will fulfill that exact nutrient requirement.

I'm sure someone somewhere has done this, but right now I can't find any diet based solely on our daily nutritional needs.

Yes, many do. As I previously mentioned everyone is VERY different when it comes to their nutrients. You will need to get a live blood analysis to know EXACTLY what you're deficient in, than you can know what it is you will need to eat.

Breakfast

For starters just eat cooked fruit for breakfast. Just kidding! It should be raw fresh fruit. There is no one who eats just meat or just vegetables or just grains. All vegans eat fruit. But there are thousands of fruitarians that eat only fruit. Nuts and seeds are hard fruits. Eating fruit never hurts the plant.

Do not misunderstand me. I am not saying to be a fruitarian. I am saying that you should break your nightly fast with a breakfast of only fruit! So this post is all about and only about your breakfast and nothing else.

Personally I have only eaten dinner or eaten once a day for decades just like Buddha.

That's a great start! Fruits should be the best breakfast you can have, although it would be better if you add energy foods like brown rice or even cereals. Good luck on your new life finally leaving alone, that should be fun!

It is not absolutely necessary to get your exact nutrient requirement each day. Some days you can have much more or less of a specific nutrient as long as overall you meet the requirement.

You could consider green smoothies for breakfast if you have a blender.

A simple example:
One banana
One apple
Some leafy greens (spinach or romaine lettuce)
A few dates
A tiny sprinkle of cinnamon
Some water

Blend!

I also like to just eat a big serving of fruit and a small handful of nuts for breakfast.

Enjoy being out on your own!
