Default Eggs

Okay, I feel a bit dumb asking for help with this... but sometimes even if I get no replies on the forums my subconscious comes back to me with an answer after I post, so here goes.

My current diet is gluten-free and dairy-free. I used to like eggs for breakfast, but only if I can eat them with toast or cheese, preferably both. Any suggestions on how to make eggs more palatable with these restrictions?

In this day and age they have bread that you can toast that is made of grains that do not include any wheat, rye or barley. That is where gluten comes from. Then there are fake cheeses made for vegans that do not have any dairy in them. They do not taste as good as real cheese but mixed with other foods, you cannot tell the difference.

I was talking about breads that you buy in the health food store but you can make your own sweet potato bread.

Here are breads made with other grains.
Breads made with exotic flours | The Fresh Loaf Spelt and kamut are supposed to be a type of wheat but do not know if they contain gluten.

I wonder if you might like them with potatoes? Frying up some potatoes with oil, garlic and pepper makes a good addition to eggs.

Thanks for the suggestions! I didn't have any potatoes, so I made some sweet potato fries to go with my eggs. It was pretty great really.

Don't think I'd have time to do this every morning, but definitely will do again. (And not just because the other half potato of uncooked sweet potato fries are now soaking in water in the fridge.)

I love scrambled eggs with pepper. Used to like salt, but it's not healthy enough.

Maybe try some spices or herbs? I love chives and green onions...also dill, onion powder, garlic powder, hot sauce...and of course throwing some veggies in the eggs helps with texture.

Couple recipes or thoughts....

Frittata, here is one with asparagus (you could omit the cheese), or one with asparagus and ham I have been eying to try

Scrambled up with tomatoes and mushrooms, or bell peppers and onions, or spinach, or red pepper, or whatever veggie combo you like. I saute up the veggies first, and then just tossed in scrambled eggs at the end.

You could do an egg casserole with hash browns and sausage (again just omit the cheese, omit the potatoes too if you wanted). You could also use chorizo and green chilis instead for a different flavor. You might be able to sub grated zucchini for hashbrowns...although that is one area I have not experimented with yet (I use it for pasta a lot though).

And of course, my easy go to favorite, just topping scrambled eggs with my favorite salsa.

Somehow eggs just don't sound appealing without starch and fat. I have done eggs with grits and bacon before, that works. Sometimes I can do an omelet without toast, esp. if it has avocado in it. I like scrambled eggs with salsa on a breakfast taco... this might work with a corn tortilla. Lots of ideas, thanks!

Great picture, yum!

I like emeadow's suggestions and I really like veggie omelets, but they gotta have cheese. Can you eat goat cheese like that first recipe asks for?

I've never tried eggs with avocado . . . interesting.

I need to try the fried sweet potatoes.

I am a butter fiend when it comes to eggs (currently using a cultured pastured butter that is incredible). Bacon grease is the next one....so I totally understand what you are saying. About the only way I eat eggs without 'fats' is just hard boiled (I tend to take those on trips a lot).

I'm doing a general no cheese restriction for now. I like diets; they make me get more creative with the unrestricted ingredients. Is that weird?

I'm finding I can live without cheese, but butter is necessary!

I found this on how to get sweet potato fries more crispy. I didn't take any of these suggestions this time, I just pan fried them in olive oil until they started to brown and then noticed they were still soggy so I put them in the oven at 450 to crisp up. They were pretty good (okay, they were really really good) but I'm going to experiment with some of these ideas on my next batch.

I love runny lightly scrambled eggs by themselves. Years ago I needed pepper/salt to enjoy them, now the flavor is full and intense enough

I second moonrambler's advice. I toss in eggs with a few potatoes on the skillet. It's a nutritious combo which tastes pretty darn good too

Eggs are very good for you. The contents of an egg give the chick everything it needs. All this stuff about eating egg whites and wasting the yolks is total garbage. Eat up to 6 eggs a day and you'll be OK.

Here's a meaty secret:

Scrambled eggs with soy sauce.

Yes that's right. Free range eggs, organic tamari, freshly ground cumin powder, a side of mashed avocado or avocado slices, and you're good to go! Scramble in coconut oil. Drink lots of water

Soy sauce makes the eggs taste that much more substantial. Trust me. Try it .

OP is trying to avoid gluten. most conventional soy sauce contains wheat as it's second ingredient. Japanese Tamari is however often wheat free.

I googled soy sauce gluten yesterday because I was in the grocery and noticed wheat was on the ingredient list. Found that even though it contains wheat, the fermentation process destroys the gluten. In lab tests, there were no detectable traces of gluten in soy sauce. I'm not deathly allergic to gluten or anything, so that's good enough for me!

I chuckled at first at non-dairy cream cheese because my mind went immediately to soy... and I'm not a big fan of soy. Then I remembered a party I attended recently that served "cream cheese" made of ground macadamia nuts. Heaven!

A while back I was talking with some friends about Ramen Noodles. They suggested putting an egg into the water (poaching it) before putting in the noodles. While this sounds strange, it is absolutely delicious. It also allows you to get your protein while eating pasta!

Steps:

* Bring water to a boil in a pot
* Crack one egg (or two) into the water
* Let boil a minute or two or so before putting the ramen noodles in
* Then either drain the water and put your seasoning on, or just add your seasoning, and wa-la!

Haha, ramen noodles definitely have gluten! My substitute for ramen is canned lentil soup with chopped tomato and avocado mixed in.

I've actually never tried poaching an egg, I'm going to look into it.

Eggs can go well in smoothies. Since my green smoothies often have blueberries in them I leave out dairy, which would negate many of the health benefits.

Though I've averaged 4+ raw eggs in shakes per day for over 10 years now without a problem, if someone felt the eggs HAD to be cooked, pasteurized eggs are available (I prefer local, free range, and raw).

The rice vegan cheese looks interesting. The majority of cheese substitutes I've seen either use soy or casein, both of which I'd want to avoid if I were bothering with a substitute, and the rice vegan uses neither.

Yes, I forgot about that since I have not been hitting the farmers markets lately. I wouldn't want to eat the eggs from the grocery store raw! Maybe I will check and see if the farmer still comes to my local gas station on Saturdays; too bad that's a week away.
