Default Traces of Milk Ingredients

I'm trying a 10 day dairy fast which is turning out so far to be extremely beneficial for my emotional well-being.

There are many products such as bread, granola bars, etc. that have no milk ingredients in the ingredients list but say under "Allergy alert: May contain traces of milk ingredients" My question is what are you chances of there being any Dairy products? Is this just a bureaucratic label to satisfy regulations or is there a strong possibility that there is are milk ingredients in it?

This probably means that it's packaged/processed in the same facility that also handles dairy products (I've seen warnings that say it that way). There's an identical warning for nuts: "may contain traces of nuts or peanuts". Some people are apparently so allergic to dairy/peanuts that even traces of them can cause a significant reaction. That's why they're legally required to put these kinds of warnings on packages.

Right, but what are the chances that there are milk products on/in the food? Would it be OK to eat them while doing the experiment?
