| We bought tofu a while back to try a chocolate mousse. The mousse was really good, but only used about half of the tofu. We sealed the rest tightly and put it in the fridge. Now I have a couple other recipes I could use it for, but I don't know how to tell if tofu is still usable. The package said we had to change the water every day, and we haven't done that. But it isn't green and furry, like meat or milk would be. It's silken tofu, so it's supposed to be squishy. Can someone with more experience than I tell me the warning signs? Or is tofu more-or-less eternal, as long as it's properly stored? Thanks, Amanda

| After you open it, you should use it within 3-5 days, and that's only if you change the water daily. Smell it. It should smell almost like nothing. If it has a strong odor, it's a goner.
