Default Simple vegan recipes. Help a lazy vegan out. :D

I'm vegan, but my eating habits aren't great, eating out a lot (food tends to be oily here) or binging on junk food. I know I need to improve it, but I'm also lazy, so I thought a nice compromise would be simple recipes. So what are your favourite simple recipes? Maybe 5-6 ingredients, with a 20 minute preparation + cooking time. I'm sure this could benefit other forum members too. I can't be the only lazy vegan on this forum.

It is simple. Just make whatever you like to eat. A week ago I went to a pizza shop and had a cheese steak sandwich. The meat was fake and the cheese was vegan soy cheese. So just substitute fake cheese and meat. There is even tofurky and fakin bacon. I love the fake duck that they make at Singapore restaurant in Philadelphia. They have lots of meat, poultry and fish but it is all fake.

My favorite easy, nutritious meal is black bean burritos. Take a can of black beans and put them in a pot with salsa and whatever vegetables you want(asparagus, mushrooms and cilantro for me), add a little water, cook it until it has the texture of chili. Put that in a tortilla with white rice, maybe use a little refried beans to "glue" the whole thing shut, and grill it in a pan until it's brown. Good stuff.

Yes, everything is vegan in that cookbook. But it gets tiring to say vegan this that and the other thing in front of all the recipe titles

Nice book, Erin! However, I don't get with the avocado BLT sandwich; bacon, lettuce, tomatoes? Isn't bacon meat? I thought the book was vegan.

There are vegan replacements for nearly ever meat type thing.

My favorite quick vegan meal was pasta primavera. Great for clearing leftovers.

In a saute pan, add olive oil, and cut up any combination of the following:

a few grape tomatoes
Half a rib of celery
olives green or black
onion
garlic
green peas
green beans
corn
pesto
sun dried tomatoes
shitake mushrooms
capers
artichokes

saute until slightly soft, add a splash of vegan broth, wine, and or just water to deglaze pan...Serve immediately over pasta.

Even though I love food and to prepare lovely vegan meals, sometimes I can be pretty lazy too. I've found that simple raw meals require the least amount of prep time since there's no cooking involved!

Smoothies are awesome! A smoothie can be a whole meal, depending how much stuff you put in them or how calorie-dense the ingredients are. I just had one and I put in it: spinach, banana, orange, blueberry, strawberry, and cinnamon. oh, and water. you can use juice instead. or omit the spinach and use almond milk or soy milk. to make it more dense, add nut butter like peanut butter, cocoa, and/or dates.

My favorite cooked quick meal are Soba noodles and veggies in a spicy peanuty sauce. The sauce doesn't require cooking and is made in a blender. Soba noodles take no time to cook and they're delicious! You can use whatever veggies you like. I like using raw tomato, bok choi, mushrooms and cucumber. To make the sauce, throw the following in a blender, to taste:
- one chopped clove of garlic
- some grated ginger
- the white part of a green onion (aka chive)
- a dollop of natural organic peanut butter
- fresh lime juice (1 quarter of a lime should do)
- a small splash of seasame oil (optional)
- about a teaspoon of tamari or soy sauce
- red pepper flakes - to taste, depending how spicy you like things
- water (you can use about a ladle or less of warm water from the pot you used to cook your soba noodles).
Just blend it all up and pour the sauce on top of your noodles, and then put the veggies atop. It's SO GOOD! You can also use udon noodles. Or pasta noodles. OR you can even make it a raw meal by using raw veggie-noodles. (I <3 noodles!)
