Default Problems with calculations of food contents

I tried to do some research on how to create a green process.
I discovered that organic matter can be processed through aerobic and anaerobic digestion and you can find plenty of processes for anaerobic reactions for organic matter and aerobic reaction for organic sludge or to absorb carbon dioxide.

I even have the equation for photosynthesis.

However the equation for composting is not there, and also the equation of humans and plants is not easy to find.

What amazed me is that it is hard to know what you must eat.

At most I could find a proper balance of solid mass an water included in the food.

I understand that fertilizer uses nitrogen, potassium and phosphorus and urea derivatives. I also know that there must be some sulfur, iron and other substances, for biogas from decomposition produces H2S and also iron is present in the blood to some degree.

So I imagined I would go to space and I would need to pack all the substances I need. I did not find the chemical flow for sulfur and iron and what happens with fertilizer components.

I also tried to figure out what is a balanced diet and I did not find any useful info.

I would love to turn my home into a perfectly green processor. Solar energy seems a choice, and energy could be stored chemically instead of batteries. But as far as agriculture and diet, I remain in the darkness.
But what is the proportion of substances
