Default Question for the raw foodies

What do you do about winter squash. Few things are more delicious but how can you eat it if it is not cooked?

Some kinds of winter squash are called pumpkin. I'm thinking of kabocha, butternut, delicata, acorn etc. The kind that is very hard.

You can put Butternut squash through a spiraliser, which makes it into really thin noodles which are easy to eat.

I've also done the same with parsnips and they are delicious raw when very thin.

You can get a spiraliser for about £25 in the UK. Probably cheaper in the US

+ 1 for spiralizer section.

One thing I like to do is take one of the larger sections of one of those massive 6-sided cheese graters and grate the zucchini/squash. You get something like rice.
