Default quick/easy vegan recipies?

I am working on switching to vegan but I am having trouble finding quick meals to prepare that only have vegan ingredients. I am not much of a cook and usually don't have a lot of time to prepare lunch or dinner. This wasn't as much of a problem when I was a meat-eater.

So far all I have are:
- Pasta and meat-free sauce
- Burritos with rice and beans
- Frozen Veggies + soy sauce
- PBJ Sandwich (heh)

I got Table for Two when I started one of my several vegan trials. I'm a horrible cook as it is, and this book was excellent as a primer for cooking in general, and it also happens to be completely vegan! She's got excellent ideas for fast meals, how to use leftovers, easy ways to mix-and-match different veggies to create a yummy meal without following specific recipes, etc.

I hear you about frozen veggies, by the way. They're awesome and easy. And I live off of PB.

Oh, another thing to add to your list -- some variation of french bread pizza. Find any sort of vegan bread, be it a premade crust, an english muffin, or french bread, put meat-free sauce on it, and top it with (frozen should work) mushrooms, bell peppers, onions, garlic, etc. I don't mind leaving out the cheese, but you could find nondairy cheese if you wanted to.

Oh, and potatoes -- baked, mashed, fried, whatever. Really tasty with salsa.
Fruit (and veggie) smoothies.
Anything with hummus. (Love hummus!) Veggies, crackers, what-have-you.
Pita bread with hummus, cucumbers, olive oil, olives, onions.

Man, I'm hungry...

One thing that you could do is to get a crock pot. That way you can throw in a few cans of beans, some onions, garlic and spices and a few hours later have delicious chili! There are lots of soups and such that not only make great meals but leave leftovers for a long time. Here are some more ideas for quick vegan meals.

-sandwhich: bread, hummus, lettuce, tomatoes, cucumber, and any other spreads that will add flavor and moisture.

-stir frying is a great technique to get under your belt. Get some bottled stir fry sauces and put any vegetables on rice or noodles. Delicious and quick, especially with frozen vegetables.

My cookbook, Vegan Family Favorites, has a ton of really easy recipes because we wanted them to be kid-friendly, easy to make, simple ingredients, etc.

Like the macaroni and cheese recipe has just 3 ingredients and takes 15 minutes from start to table.

You can see photos of every recipe in the book here. That might whet your appetite a little.

Getting a cook book (or two) hasn't even crossed my mind for some reason and I have a crock pot that has been collecting dust in the back of the cupboard for awhile. Thank you, these are all helpful suggestions.
