Post in this thread telling us what is your favorite nut milk. As you may know, I have the Vitamix of Glory and am about to put it to good use making about 3 1/2 cups of almond milk. However, I've heard there are many nuts you can use. I've never had nut milk before and need some opinions! I like walnuts but it doesn't seem to be as popular as almond milk. Also, how good is this stuff for you? |

I just made a simple smoothie that's totally awesome. One thing to understand about me: I like raw smoothies. And raw as in fruits, vegetables, and nuts (no dairy - it digests slower and clogs you up). I eat meat and all that jazz, but I like to leave my smoothies pure. Anything that asks for milk or yogurt I tend to view with a bit of skepticism. So all my smoothies are most likely edible by anyone - raw, vegan, or carnivorous. Blended with a Vitamix: ESSENTIAL INGREDIENTS: 1 cup raw almonds. 3 cups water. 2 bananas. Optional ingrediets: 2 tsps. honey (bananas are sweet enough) 6 ice cubes (depends on if you like it cold or warm or hot - you can just refrigerate if you want) Blend all for two minutes. You don't have to soak the almonds - the Vitamix just chews it up. |

Fullcrum: I'd love to hear about your other discoveries. (I've only made almond milk, when working in a Parisian pastry shop; I quite liked it.) But in the meantime, here are some thoughts you may want to consider: --Walnuts have a bitter edge to them that you may have to adjust to your tastes. Their juice can range from a purplish to almost black, which can be a nice change from the almond milk. --I know peanuts are not nuts but legumes but there's a grocer in San Francisco who's on a personal cusade to promote the health benefits of peanut milk. (I think his website is www.peanutmilk.net--can't get the links to work right on my cell, sorry) It's a funky set-up: your basic corner market but with lots of hand-made signs extolling its benefits. Google "peanut milk" to find out more. Sorry to say I've never tasted it. Have fun exploring! |

I love Pacific Almond Milk. But it's too sweet for my palate. I just saw on their site that they sell Organic UNSWEETENED Almond Milk. Yay! I can add my own stevia to taste now. If Whole Foods isn't carrying it yet I will have an absolute fit... Jennifer |

| One nutritional downside to nuts is that there are phytates in the nut bran which can inhibit mineral absorbtion. Soaking the nuts neutralizes the phytates, so if you are going to be drinking a lot of nut milk you should at least consider soaking the nuts. There is some amount of deterioration of vitamins (and the nut oils going rancid) after shelling the nuts. Nuts are obviously high in fat and large quantities make some people break out. I have broken out after eating quantities of nuts before, though not when I was on a 100% raw diet (made it 27 days). IMO, nut milk is pretty good for you, but the BEST thing you can possibly eat is green leafy vegetables, so add some kale to your smoothies! |
