| I'd like to eat a lot more vegan meals, but I basically only have two recipes under my belt: (1) Napolitana(ish?) Rice: Fry up some onions, garlic, diced tomatoes and salt. Add some boiled vegies. Serve with brown rice. Nummy. (2) Bean salad (Cannelli Beans + Kidney Beans + Red Onion + Lemon Juice + Pepper = Yum!). Nice with brown rice, too. Does anyone have any other tried-and tested suggestions for meals? I've had a look on the internet, but there's thousands of recipes and I have no idea which are any good. I work weekends and am usually in the situation where I have to get a meal together in under an hour. If a meal produces leftovers, that's a bonus. Thanks.

| A couple of my favorite quick meals: A microwaved "baked" potato topped with leftover marinara sauce, chili, or split pea soup. Two big potatoes with some veggies and/or a salad on the side is quite filling. The old British standby of baked beans on toast. Just be careful to buy baked beans that don't have pork added [maple beans are really good, but a bit sweet], or make your own when you have a day off. They keep for about a week in the fridge and can be frozen in individual portions. Make a pot of homemade soup when you have some free time. Keeps well in the fridge and can be heated quickly in small servings ... minestrone, navy bean, pistou [vegetable soup with pesto], and taco soup are a few of my favorites. And speaking of tacos ... a nice filling is mashed pinto or black beans mixed with veggie "hamburger" crumbles and taco seasoning. Top with salsa and shredded lettuce/carrots. Spaghetti is pretty quick, too [and children eat it without fussing ... lol]. A book that I highly recommend for super-quick vegan meals is the McDougall Quick & Easy Cookbook. Lots and lots of recipes for heart-healthy fast recipes. If you are cooking just for yourself, I also recommend Table For Two by Jo Stepaniak. It is one of my most-used cookbooks and the recipes are very dependable and tasty. If you love to cook and want to get more creative in the kitchen, this woman is the queen of vegan cooking. | You could mix ground flaxseed with olive oil. That tastes pretty good with beans(beans+flaxseed+olive oil). To prepare it, throw some cooked beans into a cup(I use pinto, great northern, and red kidey beans, and I think black beans taste bad). Then put lots and lots of flaxseed into the cup(at least several tablespoons) and stir it with a spoon. Then top it off with some more beans so that you have a mound of beans coming out of the cup. Pour two tablespoons of olive oil on the beans. That's about all of the cooking I do(and I leave out the olive oil unless we're out of hazelnuts).

| Suggestions for meals: How about food? Fruit, vegetables, beans, nuts, seeds, grains. Just eat them plain; they are delicious without anything on them. That said, Dr. John McDougall, Dr. Joel Fuhrman, and Dr. Neal Barnard have plenty of enjoyable vegan recipes and meal ideas. |

| I love brown rice with beans! Just soak pintos overnight in 8 cups of water for 2 cups of beans. Drain off water and add garlic, cumin, red pepper flakes, onion if you like. Cook for two hours on low heat. Whip up in the blender and eat over freshly cooked rice. You can add nutritional yeast and hot sauce, and wrap this in a lettuce leaf for an on the go snack.

| My favourite way to make rice. Stir-fry some mushrooms (I like enoki) with ginger and garlic for a couple of minutes, then add some soy sauce and greens (such as spinach or choy sum) and wait till they wilt. Add some steamed rice and stir through. Delicious |

| Brown rice and lentils take about the same time to cook, and use the same water ratio as well. What you might want to do is cook up a large pot ahead of time, flavored with your favorite spices, onions and peppers. Then, use that as a base for sautéed vegetables, marinara sauce, etc. |

| This is a delicious soup that once prepared will give one to two people some very satisfying meals. Half a largish pumpkin chopped in pieces and steamed until tender. Remove skin when cooked if necessary. One large onion and some cloves of garlic diced and cooked until tender in a little cold pressed olive oil and a little water. After cooking above use the same pot to cook one sliced leek in a little water until tender. Mash or blend in a food processor the pumpkin, onion, and garlic. Return to the pot with the leek. Add a tin of diced tomatoes and stir until all ingredients are combined. You may want to add some extra salt. You can also add some chopped fresh basil leaves. Other alternatives are cumin seed, or a dash of curry powder and chilli. Serve with crunchy bread rolls, tahini spread, or fresh ripe avocado. Delicious.

| Into a thick base pot put the following: Fresh green beans; chopped red and yellow peppers in largish pieces; chunks of zucchini (baby marrow); mushrooms (if they're big cut into halves or quarters);chunks of onion; as much crushed garlic as you want, depending on your taste; fresh thyme and pineapple sage or some mixed dried herbs if you don't have fresh ones. Add salt and black pepper and some olive oil. There should be enough olive oil to coat the vegetables and leave a bit at the bottom of the pot.Mix with a big spoon-gently. Put the lid on and leave for about 45minutes at a very low temperature.Right at the end about 5 mins before taking the pot off the stove you can add some spinach. The garlic and olive oil along with the juices from the vegetables and herbs make a delicious gravy.If you want you can thicken it with corn flour. Serve with brown rice and lentils. L |
