I used to like Serial Experiments Lain but now I feel it's too self-indulgent for its own good, never mind the masterful animation and layouts.

One up again for Neon Genesis Evangelion the series, which I found heady, thought-provoking, disturbing and fun, but I'd suggest starving off the 2 movies which wrecked the whole thing for me.

Definitely watch Ghost In The Shell: Stand Alone Complex seasons 1 & 2, I don't know what they feed their writers, but the explosive combination of tech, politics and philosophy with good action will make you drool at the mouth begging for more.
