Default I Made the Best Meatloaf Today

No, seriously. It was delicious. I'm a horrible cook so thought I'd share the news that I made the most tantilizing and delicious meatloaf EVER.

I used to make meatloaf. Now I make meat muffins. They keep in the freezer for months (hypothetically, of course) and are great for sack lunches.

NDN - Is it going to be a battle of the loaves of meat?

Just One More - I AM- I mean, my meatloaf IS tantilizing and delicious.

Lauxa - I was going to do that but my dad wanted to make it in a cake pan. so it was more like a meatloaf cake.

dreamlearner - What did you make?

Kaie - I like to put ground cinnamon in my spahgetti sauce. XD My family hates it but I think its soooo yummy!

Mynder - No, I used the stray cat this time.

I put cinnamon in my spaghetti sauce too! It is very Greek

I have never thought of it for meatloaf though.

I just tried it one day because it seemed like it would be a good idea! I've never heard of anyone else doing it before! Now I have to show this to my parents because they disbelieve in the power of cinnamon (they say no one does this). A little cinnnamon, like a pinch, gives it a really good flavor

See, you are a good instinctual cook That is definitely a Greek thing for one. It is usually cooked first with the meat, and it makes the sauce yummy I learned about it from a bf who worked in a Greek restaurant.

Default Sopressata/Roast Beef Wraps

The ones I made yesterday, that is! They came out pretty good, but I don't feel like giving them their own thread, so I will share my filling and its guesstimated (I work by feel when I make sandwiches) measurements here!

For one wrap:

5-6 shaved slices sopressata
2 thin slices roast beef
2 thin slices Colby Jack
3-4 strips each red and yellow pepper (nuked until slightly softened in a bit of olive oil)
about 2 Tbsp red onion (see peppers note)
1 Tbsp chopped black/kalamata olive mix
5-6 dill pickle slices
1 tsp. pepperoncini
6-8 raw baby spinach leaves
3-4 splashes of pepper vinegar
black pepper to taste
