Default Spinach and Sausage Soup

Very large pot or crock pot.... note: freezes very well,

1) 1 jar of pasta sauce ( I used plain no spices etc)

3) 2 small cans beef stock ( if you have your own made up even better)

4) i can chicken stock ( your own is better)

5) 4 cups of water

6) 1 can of crushed tomatoe with juice

7) splash of white whine or white whine vinegar ( need a little accidity)

flavoring ... 2 Tlb italian spices, 2 Tlb low sodium soy sauce, 1 splash of worshteshire sauce , for a kick ! 2 Tlb garlic powder, pepper to taste , you do not need salt in this

in frying pan, fry up 3, or 4 large* chopped garlic cloves, 4 stalks of celery , 1/2 large red onion sliced.... add this to pot of (above)

cook 3 italian sausages mild or hot, in your oven then let cool,

in the meantime cook 2 cups of whole wheat pasta or enriched pasta ( any shape) is fine

add the cooked pasta to the stock, then cut up sasuage into small pieces and add this to soup

Cut up one large carott in small pieces, one large potatoe in small pieces, and
3 big hand fulls of fresh uncooked spinach, juiline cut add to soup

once you have everything together continue simering on stove or in crock pot
then add......... 3Tlb of Romono , and 2 tlb of parmesean , let all the flavors marry together for a couple of hourse ....low heat

Serve hot with a home made crusty bread, and for added flavor you can add
shredded mozzerella to your bowl or .. small splash of sour creme or just eat it plain!!

enjoy!!!!

Variations, omit sausage and use cooked ground hamburger meat , I love it both ways

ok, I have transmitted this recipe to the chef in our family. He likes to film his culinary efforts, so I'll let you know when Sausage and Spinach Soup...The Movie is available for viewing on youtube! I'll make sure he gives you credit, of course!

Sounds so yummy.
