Default Which business structure?

I am curious as to what other use for their business structures (S Corp, LLC, etc.) and why. I've done most of my research towards LLCs, but was thinking about having a larger entity, such as an S Corp that then controlled various other companies that I plan to own.

I have one friend that does something similar with his restaurant. He has a C Corp (I believe) as holding company and the restaurant itself is an LLC.

Does anybody have any good resources for doing something like this? I'm aware of getting the right paperwork and all that jazz, so I'm not looking at the "how to" for each type in particular, just thinking about how to control multiple companies.
