Hi Ed,
I have an idea for you, but I have to make a disclaimer at the end of this post.
I got it from your description that your allergies are acquired - you got them during your lifetime.
Getting rid of these allergies is one of the niches where NLP might work very efficiently. I'm pretty sure that NLP practitioners - after basic training are taught this technique. You can research (read Google) it more with keywords "NLP allergies". I've done it myself, I've seen others do it. It might help to stop to prevent future reaction to the the stuff you are reacting now.
It is a short process and the results may be spectacular. In the long run the symtoms may re-appear, so the follow up may be needed. But as you describe it, even a short break might be useful, at least to be able to get allergy shots.

Now, the disclaimer. This is one of the cases when NLP does something "impossible". Conventional science is not completely happy with the case when you do something in your mind and stop getting allergic reaction.
It may just be a placebo effect at work. On the other hand, if it works, it works.
Also, the success, may heavily depend on the skill of the operator. Amazing as it is, since it is you who is supposed to do all the work. So look for a certified NLP practicioner. Get a copy of NLP allergy technique from the net, familiarize yourself with it and check the NLP practitioner if he knows what he is talking about. I don't think that there might be serious consequences if the technique is badly performed, but paying money for nothing is not very nice in any case.
You may ask your allergist what he thinks about you trying psychotherapy to deal with your problem. You don't have to mention NLP. Ask for any dangers. Most likely the allergist will say, that psychotherapy will not work in this case. He may even laugh at the suggestion. It is to be expected.
