That's true that when you begin to die, the blood starts pooling in the organs, but it also starts pooling at the lowest point in the body (which, in most human cases, since the blood is sent to the organs, it'd pool in the organs themselves.) When an organ fails, it starts decaying right there. And since "normal" death is brought on by your body failing on itself (and organ failure), you start decaying a few hours before death actually hits.
