If you shop hard on kayak.com, and buy the flights well in advance during the low season (say Oct thru March), I've bought roundtrip tickets to San Diego for two (which is somewhat further) for $1200, with stops for a few days in New York and Chicago. You wouldn't have any trouble getting a return flight for £350 with plenty of notice.

The last time I stopped in Vegas I picked up a hotelcoupons book (for free) at a local garage, and used it to get a double room with kitchen and living room within walking distance of the strip for $70 per night. With a kitchen you can pick up some TV dinners, and a box of cereal so that you only have to eat out once per day.

I think that 4 nights accomodation, plus return flight from a London airport, and $300 for the seminar would leave you a little bit of change from £650.
