The Best Ever Pumpkin Muffins!
I've had so many rave reviews on this pumpkin muffin recipe, all my friends and family ask me to specially make them ... Ingredients
¼ cup vegan margarine
½ cup sugar
2 egg replacer
2 ½ cups Self Raising flour
½ cup soy milk
1-1½ cup pumpkin puree (Just cover pumpkin in a saucepan with water and cook until tender and water soaked into puree) Method
1. Preheat oven to 200°.
2. Blend the margarine, sugar in a bowl with handheld beater.
3. Then beat in the egg replacer and fold in the pumpkin puree and soymilk.
4. Fold the flour into the wet mixture and place into prepared muffin tins.
5. Sprinkle with cinnamon sugar and bake for approximately 20-25 minutes Servings: 6 large muffins or 12 small muffins
