There are zillions of recipes on the web and a lot of them aren't difficult.

For example, check out how easy this is:
Vegan Recipes - Tofu Scramble

Personally I'm fond of the following bean salad:

Take 1 can red kidney beans and 1 can cannelli beans (rinse the beans under the tap in a strainer before use).
Combine the beans in a bowl.
Add some chopped red onion (I like it finely chopped, personally).
Add lemon juice or balsamic vinegar to taste.
Add pepper to taste.
Adding some chopped tomato and cucumber is nice too.

It's yummy, takes 2 minutes to make, costs bugger all, is really filling, and you usually end up with leftovers for a couple of lunches.

Plus add some rice and you've got a complete protein...
