Here is a kick-ass vegan recipe I once tried.

Spicy Indian Oats Upma

Ingredients:
2 cups Oats (I use Quaker 'quick-cooking oats')
2 small Onions - finely chopped
2 small cloves of Garlic - finely chopped
1 small piece of Ginger - finely chopped
2 small Tomatos - finely chopped
1 cup Peanuts
1 sp Salt, Red-Chilli powder (or flakes)
A pinch of turmeric
Cilantro and Mint to taste

Condiments: 2 cups Water [400ml] and 4sp Sunflower oil

Process:
Heat some sunflower oil in a deep frying pan. Throw in the chopped onions and saute them until they're almost golden brown. Now add in the finely chopped garlic, ginger and tomatoes. Add the peanuts, salt, red chilli powder (or flakes), turmeric. Now add the oats and pour in 2 cups (400ml) of water. Place a lid over the frying pan and simmer for 5-8 minutes. When the mixture takes on a soft cake-like texture, garnish with some cilantro and mint leaves. Serve hot with Indian mango pickle.

Warning!: Extremely spicy preperation.
