It sounds like you aren't getting enough calories and/or protein. When you're not getting enough calories your body will start up serious unresistable cravings. It's just your body telling you that you aren't getting enough of something. I've found that it's usually protein, but not necessarily. It could just be calories in general, or even certain vitamins or minerals. If it's protein, the craving will be general but will be unsatisfied by sugar and continue until you eat protein or get completely stuffed (in the latter case, you'll still want more food but be unable to eat it). If it's general calories, you'll feel the craving until you get full, and they'll abate after that. If it's vitamins or minerals, you'll get a more specific craving. For example, salt cravings often indicate a lack of potassium or sodium in your diet.
You need to remember that those vegetarian foods you're eating contain significantly less energy per gram than the non-veg equivalents. This can be kind of confusing to your eyes and stomach. To get enough calories on a veg* diet you'll probably need to eat much more volume than you think. This, of course, assumes your not eating greasy and nasty yet technically veg* food.
If you've been going for too long on too little calories, your body probably entered into starvation mode. This is bad. If you were trying to lose weight, the progress stops in starvation mode (unless you really starve yourselft). When your body enters into starvation mode, it stops creating new muscle, begins eating your old muscles and organ tissue, and begins holding onto fats for dear life. If you've entered into starvation mode, start eating more and in a few weeks you'll be fine. You'll know that was the case by the sudden burst of energy you'll have when you up your caloric intake.
