I'll throw another one in here that I love to make.
Sorry..I usually wing it so the amounts are not exact.
Swiss Chard, black bean, & mushroom tacos
2 bunches swiss chard
2 chopped shallots
1-2 cans black beans...or better yet, use your own cooked beans
1 poblano pepper (roasted, peeled, and cut into small pieces)
2 handfuls of sliced mushrooms of your choice, I like crimini or portobello.
2 limes
2 or 3 tablespoons of Masa, or a thickener of some sort.
a bunch of corn torillas (I like to make them fresh...it's a lot of work but GOOD)
Saute the shallots and mushrooms in a little bit of canola oil in a BIG pan. Add the black beans with the juice, poblano peppers, and swiss chard...let the chard wilt and simmer for about 20 minutes. Sprinkle in the Masa to thicken it and simmer for around another 10 minutes. Squeeze juice from 1 or 2 limes in it. Add some salt to taste and serve with some fresh corn tortillas to make some yummy soft tacos.
I also use this filling for tamales as well.
