If you want a carb substitute, beans may be a good replacement for potatoes and rice, since they have a lower glycemic index and glycemic load. Since beans are relatively high in calories, you wouldn't have to start eating three pounds of broccoli a day to make up for the calorie loss when you give up rice and potatoes.
