The way I see it, if you create the restaurant and do it right, you won't have to worry about vegans finding out. For the lack of supply they'll flock to you. The business that'll be keeping you afloat in the meantime is the regular meat eating crowd. Your motto could be something like "Real Food - Fast". At the same time you might also want to avoid over promoting the health aspect. People shouldn't get imagery of munching celery stalks when they see your restaurant.

*Edit* As much as I like celery. Especially with peanut butter.
