Depends on the software, but if it was an issue you could always offer a PDF version for Mac users...
I think the extra multimedia benefits outweigh the security benefits. The security is just a plus. One I have on my 'to buy' list allows you to create the book in HTML and anything you can do in HTML you can do in the book. Very powerful stuff
