I never really thought about it

It's not rocket science how to approach women/men prositutes.

Just say something like "Hi my name is such and such, I am in the process of putting together a documentary about different peoples lives, yadda, yadda, I'm really interested in telling a story from the perspective of a prostitute, do you have any idea of who, or where I would start in finding volunteers wishing to contribute by telling their story".
