First off congrats on your decision to try out vegetarianism! For me it has been a very rewarding and fulfilling life decision for about 8 years now.

Early on in my vegetarian days a friend once put it to me this way and I later discovered he was completely right: being vegetarian does not limit your food choices, but rather expands them! This may seem paradoxical, but if you think about how many people who eat meat tend to center their dishes on the same proteins (red meat, poultry, chicken, fish) and more-or-less treat vegetables as an afterthought, then you can imagine the possibilities that will open up after ditching meat. Suddenly those vegetables you never considered in the grocery isle will start ending up in your cart and you will start learning A LOT about cooking.

I've never gotten bored! Even after 8 years I still don't feel like I've approached any limit for meal variety. I am constantly searching the net for new recipes and trying them out.

Starting out will be challenging, and at first you may feel your choices are limited. This will pass as you gain experience preparing dishes based around vegetables and fruits.

If I were to make a suggestion it would be research research research! The web is amazing for seeking out recipes and how-tos.
