Optimally, that is true. But I have yet to meet a vegetarian whose diet is comprised mainly of veggies.
The ones I know tend to eat a lot of grains and starch, so that's not low-carb
at all. And it tends to be reflected in their waistline size, doubly so if they eat starch with a lot of dairy.
