Even though I love food and to prepare lovely vegan meals, sometimes I can be pretty lazy too. I've found that simple raw meals require the least amount of prep time since there's no cooking involved!
Smoothies are awesome! A smoothie can be a whole meal, depending how much stuff you put in them or how calorie-dense the ingredients are. I just had one and I put in it: spinach, banana, orange, blueberry, strawberry, and cinnamon. oh, and water. you can use juice instead. or omit the spinach and use almond milk or soy milk. to make it more dense, add nut butter like peanut butter, cocoa, and/or dates.
My favorite cooked quick meal are Soba noodles and veggies in a spicy peanuty sauce. The sauce doesn't require cooking and is made in a blender. Soba noodles take no time to cook and they're delicious! You can use whatever veggies you like. I like using raw tomato, bok choi, mushrooms and cucumber. To make the sauce, throw the following in a blender, to taste:
- one chopped clove of garlic
- some grated ginger
- the white part of a green onion (aka chive)
- a dollop of natural organic peanut butter
- fresh lime juice (1 quarter of a lime should do)
- a small splash of seasame oil (optional)
- about a teaspoon of tamari or soy sauce
- red pepper flakes - to taste, depending how spicy you like things
- water (you can use about a ladle or less of warm water from the pot you used to cook your soba noodles).
Just blend it all up and pour the sauce on top of your noodles, and then put the veggies atop. It's SO GOOD! You can also use udon noodles. Or pasta noodles. OR you can even make it a raw meal by using raw veggie-noodles. (I <3 noodles!)
