You do it as with any other mp3s - actually you don't save them onto itunes but import into itunes library. First download the podcasts as mp3 files from Steve's site and then use the import function in itunes to add them to your library. What also worked for me was creating a playlist in itunes with mp3s without adding them to the library - then I could drag&drop the playlist onto the ipod.
But... I agree with SmellyOrc... I don't like itunes and got rid of it as soon as I found other lighter, smaller and easier tools to do the same job, for example iShuffe for ipod shuffle, but there are many other programs for other ipods.
