I made the blueberry pie for my in-laws house cooling party this weekend (they're moving out). My mother-in-law repurposed the pie to celebrate someone's forgotten anniversary. Terrific! The special couple left early and the pie didn't come out until late, long after all the other desserts came out. Sigh. Then... a short while later, my husband took a picture just before the last slice disappeared.
I'm going to try the recipe again for a 4th of July party. My nephew loves fruit but is allergic to nuts, so I'm trying the "Fat-Free Crust" I found in
The Joy of Vegan Baking. 2 cups Grape Nuts cereal + 1/2 cup thawed apple juice concentrate, baked 10 minutes.
I'm planning on using
strawberries, apples, and
blueberries. I figure using too many blueberries in the puree would obscure the apples & strawberries. I don't have time to experiment, so I'd appreciate any ideas.
