I think we should go back to eating offal. The brains and organs of grass-fed animals are extremely nutrient-rich, much more so than the muscle flesh that people are so fond of.
And nothing is more satisfying than home-made beef and chicken broth made with bones and marrow—in addition, they add important minerals and digestion-aiding gelatin to the diet.
When people eat steaks or pork chops now they probably eat a lot more than when animals weren't grown to be so lean, because they're not as satisfying.
