There are vegan replacements for nearly ever meat type thing.
My favorite quick vegan meal was pasta primavera. Great for clearing leftovers.
In a saute pan, add olive oil, and cut up any combination of the following:
a few grape tomatoes
Half a rib of celery
olives green or black
onion
garlic
green peas
green beans
corn
pesto
sun dried tomatoes
shitake mushrooms
capers
artichokes
saute until slightly soft, add a splash of vegan broth, wine, and or just water to deglaze pan...Serve immediately over pasta.
