My favorite easy, nutritious meal is black bean burritos. Take a can of black beans and put them in a pot with salsa and whatever vegetables you want(asparagus, mushrooms and cilantro for me), add a little water, cook it until it has the texture of chili. Put that in a tortilla with white rice, maybe use a little refried beans to "glue" the whole thing shut, and grill it in a pan until it's brown. Good stuff.
