There is an adaptor for the VGA out (not DVI unfortunatly) by Matrox that allows you to power up to three displays from the one output.

Here it is > Matrox DualHead2Go and TripleHead2Go for Mac

Alternativly....you could just opt for a 30" Apple Display......huge!
