Can I polarise to a "greyworker"?

No. If you think you can be half-way it means you really don't get what Steve was talking about. Read his articles again. If that doesn't work, go out and get some experience, or go in and get some insight, to see if you can fit what he's saying into the real world.
Based on your definition of polarity this is true, however, your definition of polarity is actually an application of polarity.

I'll suggest you reread steve first article polarity. The concept of polarity is more abstract then :
love / fear
dark worker / lightworker

Polarity has to with the energy being exchanged from two opposites. When the two opposites(poles) are brought together they cancel each other out and there is no energy. When the two opposites(poles) are clearly separate and you polarize to one of them there is lots of energy.

The thing with polarity is the two opposite could be any opposites. In your example they are love / fear or darkworker / lightworker. They could equally be:
good / bad
black / white
creation / acquisition
abundance / scarcity
happiness / sadness
suffering / joy

Now I'll grant that perhaps you could abstract all charged opposites to be some form of love / fear polarization. There is still some merit in noticing other opposites because they have subtle differences in energy then love / fear.

With polarity there is the big thing pavlina emphasize is that there is a lot of energy when you polarize to one of these opposites and equally important little to no energy if you hold both opposites.

An example of holding two polarized thoughts:
"I will buy a car"
"I don't have money for a car"

Is there energy here? Do I know what I need to do? If so, what is it?
It's not obvious to me because it feels like indecision. The energy from each pole seems to cancel the other out.

Now what if I only hold:
"I will buy a car"
or
"I don't have money for a car"

If I hold only one of these thoughts it becomes more obvious what I will do. If I say "I will buy a car" then I will start taking all the steps toward buying a car including making money if I must. If I say "I don't have money for a car" then I will stop this thought process and continue doing other things.

Now back to the original thought of greyworkers. A greyworker is the polarizing away from darkworker/lightworker.

The two poles are:
"I will be a darkworker/lightworker"
"I will be the opposite of a darkworker/lightworker (greyworker)"

"Balance" is the guiding force of the greyworker. Their polarization is still charged with energy and causes them to take clear actions. They seek out opposites and neutralize them. And as you can see this would cause a very clear energy flow between greyworkers and lightworkers/darkworkers. Lightworkers/Darkworkers breath out polarization while they greyworker breath in polarization.

Yes, I do recall Pavlina dismissing the usefulness of balance. I think it makes sense.
