There is no downtime. You can just re-write pages at your leisure, so if you use the SBI BlockBuilder tool, each page will remain in place until you choose to upload a new one. SBI says it can take up to 20 minutes to rebuild your site but often the changes are done within seconds. I prefer to upload my own HTML pages to Site Build It (as do many others), so you can upgrade each page on your computer and then do a mass upload at the end. The new design is up within seconds across the entire site.
Content gathering is easy if you know your subject matter. Otherwise, you can probably double the time it would take if you just wrote off the top of your head. What makes it interesting is your passion for the subject, your personal anecdotes and opinions, and your ability to connect with readers - by talking to them straight. Offer them something they can't get anywhere else. Your strategy of content first, monetizing later is spot on! People often get sidetracked trying to make a few dollars off AdSense in the early days but in fact this can damage your initial Google Indexing. Its better in the long run to 'work for free' in those early days and reap the rewards later.
