Default bodybuilding and healthy diet

i've done recreational bodybuilding throughout my adolescent and now adult life, off and on. as everyone knows, one of the most important things for growth is adequate caloric intake, which brings me to my question.

after perusing the forum, there seems to be a consensus upon emphasis of eating less to feel better and healthier throughout the day. i am used to stuffing myself with carbohydrates in my meals to meat my caloric needs for lifting, so i am wondering what you all would recommend instead.

as an aside, i am unable to eat 'small,frequent meals' due to inconvenience. i had my colon removed a few years ago, and basically have to use the restroom everytime i eat, so i try to do all my eating in 3 sittings.
