Fresh eggs are fine; their cholesterol is fine too because our blood vessels do not have receptors for cholesterol. Eat all you want without worrying about cholesterol; however, when the cholesterol in an egg becomes oxidized (this usually happens when you cook the yolks) it can cause coronary heart disease. This is why you should not buy products that are made with eggs such as pancake mix.
