What I can tell you is plan to eat a lot of rice. Any dish you would normally have with pasta, you'll be making with rice instead. There are gluten free substitutes for bread and pasta in the natural foods section of the supermarket, but they are usually pretty poor substitutes for the real thing. You can also eat other grains besides wheat, so oatmeal can be a healthy breakfast instead of cereal.

I would recommend what is commonly called the Paleolithic Diet, in that it mirrors what early humans ate during the Paleolithic period: leafy greens, fruit and meat, but unfortunately you've ruled meat out too. This adds some challenges, for instance keeping up your protein and iron levels. Prepare to eat a lot of beans, soy, or nuts.

If you're ruling out meat for health reasons, I'd ask you to reconsider and google the Paleolithic diet for more info. If you have a moral or spiritual reason to avoid meat, then so be it.
